Please help me understand the security advantages of not reusing addresses
I understand it has something to do with revealing your public key, which is usually hidden by a hash.
If this is true, then why does only the remainder of the UTXOs within a transaction get transferred to a change address- not all of your bitcoins?
Also- if I use my private key to sign non-transaction data, am I revealing my public key, or is there otherwise some security risk by doing this?
EDIT: I am talking specifically about security risks, not privacy risks.

Someone should make, “Bitcoin Go”
I'm no programmer but if I was, I'd make a, "Bitcoin Go" modeled after Pokemon Go. Have a mining pool where X% of coins go to the game and those coins spawn all over the world at different denominations for people to find.
